
Who doesn’t love a soft gingersnap cookie?! I can’t ever find soft ones in the store, so I decided to share my super simple recipe with you all so now YOU can make the most amazingly soft gingersnaps too!
Ingredients:
2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ginger
3/4 cup soft butter
1/4 cup molasses
1 egg
1 cup sugar (plus a little extra to roll cookies in)
First, add all dry ingredients (except sugar) into a bowl and combine.
Next, mix butter and sugar in mixer until completely combined. Slowly add molasses and egg in. Mix until combined.
Slowly add all dry ingredients into wet ingredients.
Scoop out portion sized cookies and roll into a ball. Drop into a bowl of white sugar and completely coat. Place onto your cookie sheet and slightly press down to slightly flatten out.
Bake at 350 degrees for 10 minutes. They will be very soft and seem like they need to cook more… but DON’T… leave them on cookie sheet to cool. ENJOY!!!
