
One of my favorite things to do with apples is to make some delicious Apple Butter! We love to eat this on toast, pancakes, waffles, scones, or over some ice cream. I’ve also been known to use this as a fruit dip. It’s so easy to make and the taste is to die for. If you have never heard of apple butter, make yourself a batch… you will NOT be disappointed!
Ingredients:
5 pounds apples (after peeled and cored)
1/4 cup water
1/2 cup pure cane sugar
1/4 cup brown sugar
1/4 cup molasses
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1 Tablespoon lemon juice
1 teaspoon vanilla
Peel and core all you apples. Add apples and all remaining ingredients to your Insta Pot. Put lid on. Press ‘Manual” or ‘Pressure Cook’. Set time for 15 minutes.


After your 15 minutes is up, let your Insta Pot do a natural release (basically… just leave it alone for about 20 more minutes depending on what altitude you live at. You won’t be able to take the top off until the pressure is released anyways).
Once the pressure is release, take the top off and puree your apples. I use my immersion blender. You can also use a potato masher, but you will have chunks in it, which is fine… it still will taste the same. Now you are done and ready to enjoy!!!
I will either keep mine in the fridge to eat or can mine in a water bath. This recipe makes 4 pints. I water bath my jars for 15 minutes. Just simple ladle your apple butter into warm, sterile canning jars, wipe off the rim, place a new lid that has been warmed in hot water (so the rubber part will soften up and make a great seal), then place in your water bath. Make sure you have water covering over the jars about an inch. Then once the water is boiling, set you timer. Once time is up, let rest on a cloth on your counter until it comes to room temperature (usually 12-24 hours). Make sure the seal is good and store in your food pantry to enjoy all year!
