
One of the easiest things to preserve during the summer is corn. You can also pressure cook into jars, but my pantry is busting at the seams usually and I have freezer space. So I freeze my corn.
After shucking all of your corn and the fine silk hair, make a big pot of boiling water. Also, in your sink, make a big bath of cold water with ice.
Boil your ears of corn for 2 minutes and then immediately drop into your cold water bath. Remove from cold water after they have cooled down so that you can handle them. This also stops the cooking process so that you don’t end up with mushy corn.
Now cut the kernels off the cob with a sharp knife or cut cutting tool- you can find them on Amazon). I go back and forth between my tool and knife, lol.

After your kernels are ready, measure out into freezer bags. Depending on your family size and how much you think you would need for a meal. I freeze 4 cups of corn in each freezer bag. Label the bags before filling to make it easier.
Now just bring them to your freezer, DONE! I hope that you enjoy your corn like we do. It tastes so much better than the canned corn off of store shelves, especially when you snag your corn from the farmers market or local farmers at it’s peak during the growing season.
