Who doesn’t like roasted garlic?! It is so versatile and can be used in so many dishes, or simply spread over a piece of toasted baguette… YUM! I had a ton from my garden so I decided to roast some ahead of time and put it in the freezer for those busy days that I don’t have time.

Ingredients:
4 cups fresh garlic, skinned
1/2 cup olive oil
2 teaspoon salt
1 teaspoon pepper
First, prepare your garlic by taking the skin off of each clove. Do as many as you’d like to roast. I did about 4 cups today.

Toss your garlic with olive oil, pour onto cookie sheet lined with aluminum foil. Preheat over to 425 degrees. Sprinkle your garlic with salt and pepper, cover with another sheet of aluminum foil, folding sides of aluminum foil over to hold in the moisture. Bake for 45 minutes.
Take out of the oven when time is done, leave the aluminum foil on the garlic and let rest for 20 minutes.

Place garlic into freezer bag after cooling down to room temperature, label bag, and place into freezer to enjoy for a later time…. (besides the few you DEFINITELY need to sample!!!

And there you have it… roasted garlic that is readily available to you in no time!!! Like I said before, spread it over a baguette, toss it in some marinara sauce, add to some mashed potatoes for an extra touch…. garlic goes with any meal in my eyes!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
